Balsamic Glazed Salmon With Quinoa

WHAT YOU’LL NEED:

200 grams Salmon Fillet

2 tsps Avocado Oil

2 Garlic (Cloves, minced)

3 tbsps Balsamic Vinegar

1 tbsp Maple Syrup

Sea Salt & Black Pepper (To taste)

1/2 cup Quinoa (cooked)

1 cup Broccoli

LET’S GET COOKING:

Cook the quinoa as per instructions on the packet, and set aside. Preheat the oven to 200°c.

Use a small pan to warm up some avocado oil on low-medium heat. Afterwards, add the minced garlic and cook it until it becomes fragrant (about 1-2 minutes). While cooking, stir it frequently and keep a close eye so it does not burn.

Next, combine balsamic vinegar, maple syrup, salt, and pepper in a small bowl, mix well, then add it to the pan. Let it simmer over low-medium heat for approximately 5-6 minutes until the consistency is thickened.

Place salmon skin-side down in a baking dish. Brush generously with the glaze. Bake for 8 minutes and then remove from the oven.

Brush with additional glaze and bake for 10-12 minutes until it flakes easily with a fork. While this is cooking, steam the broccoli.

Serve with the quinoa and broccoli. Enjoy!
